Homistro breakfast 5 minutes avocado cucumber tomato toast

This toast is fulfilling, tasty and sure to keep you going in the mornings. It’s simple and awesome!
Avocados are a great source of healthy (mono-saturated) fats, dietary fiber, vitamin C, B6, K and E, as well as minerals like magnesium, manganese, copper, zinc and potassium (actually contains 2 times as much potassium as a banana). Furthermore it boast anti-oxidant and anti-inflamatory properties. How awesome is that?

Ingredients for avocado, tomato and cucumber toast

  • 2 slices of nice wholegrain bread – pick your favorite
  • 1 small ripe avocado, halved and sliced
  • 1/2 a medium tomato, sliced
  • 1/4 of a cucumber, sliced thin
  • Salt
  • Olive oil & balsamic vinegar (optional)

Instructions:

Step 1: Toast the whole grain bread.
Step 2: While waiting for it to get nice and golden, peel and slice your avocado and slice the cucumber and tomato as well.
Step 3: When the toast is ready, pile up a slice or two of tomato, some slices of cucumber and then fan over half the avocado on each toast.
Step 4: Season with some salt and add some olive oil and/or balsamic vinegar if desired. I find that adding some balsamic vinegar really lifts the avocado toast to a whole new level.
