Need a healthier option to the BLT (Bacon Lettuce Tomato) sandwich that takes a fraction of the time? Try this!
Breakfast, as many say, is the most important meal of the day. I always have a better, more energetic and productive morning when I have a good breakfast. Many of us – let’s face it- get to work with little more than a coffee in our stomach to keep us going till lunch. I was doing this for years. NOT GOOD!
Hummus is a wonderful Middle Eastern spread from chickpeas, tahini, olive oil, garlic, lemon juice and spices. It’s rich in protein, filling, nutritious and a great way to start the day. Although it’s quite easy and fast to make hummus at home, many stores stock all natural hummus which makes a great time saver and leaves less dishes in the sink. So get yourself a nice all natural hummus (no chemical additives and preservatives) and use it in this super easy, super quick recipe. Oh and do I need to say TASTY? YUM!

Ingredients for hummus lettuce tomato sandwich
- 2 slices of whole grain bread
- Generous amount of all natural hummus (not more than 2 heaped tbsp)
- 3 or 4 sun dried tomatoes
- 2 lettuce leaves (can be substituted with some arugula, spinach or any tender salad leaf)
Instructions for HLT
Step 1: Slice 2 pieces of bread
Step 2: Spread some hummus (about 1 tbsp) on each piece of bread
Step 3: Add 3 or 4 sun dried tomatoes to the sandwich
Step 4: Add the lettuce or salad leaves to the sandwich
Step 5: Close it up, slice in half and enjoy!
