A lentil soup is always a good idea – it’s fragrant, nutritious and so easy to make and enjoy over a few days.
I have been a little sick for the past 4 days – the classical autumn flu. So I stay at home, go early to bed and drink bucket loads of herbal tea 🙂 Eternal patience is key but so is healthy food. Now, red rice, spicy chicken and sautéed greens are ok but, as per recent experience, NOT ideal for when you are tired and feverish. The combination of carbs and protein is a bit difficult to digest and maybe requires more energy than a sick person has.
So today I finally made my favorite homemade lentil soup – with lots of herbs, nice, alkaline veggie broth and nutritious brown lentils. It has an added twist – ginger! It just makes it a little bit…warmer, cozier and goes so well with the flavors. Even if you are a bit skeptical at first, give it try and add a little bit of fresh ginger 😉 Now here’s what you’ll need to make a small pot of delicious lentil soup.

Ingredients for Brown Lentil Soup
- 2 tbsp extra virgin olive oil
- 1 medium onion, finely chopped
- 1 celery stick, finely chopped
- 1 garlic clove, finely chopped
- 1 tbsp ginger, finely chopped
- 1 tsp paprika
- 1/2 tsp cumin
- 1 tsp dried thyme
- Black pepper
- 1 small carrot, quartered and then chopped
- 1 medium tomato
- 3 cups water
- 1 cube vegetable bullion
- 2 cups, 400 g (13.5 oz) cooked lentils, preferably jarred
- Small handful of chopped parsley and extra for garnish

Instructions for Lentil Soup
Step 1: Saute onion and celery
On medium heat, add the olive oil to a pot and then sauté the onion and celery until they are getting soft (5-7 min).
Step 2: Add more flavors
Add the ginger, garlic, a pinch of pepper and spices and stir for another half a minute. Then add the carrot and tomato and let it cook for 5 min, stirring occasionally.

Step 3: Add water, bullion and lentils
Add the water, cube of bullion and lentils, bring to a boil, turn down the heat and let it simmer for 5 minutes. Stir in a small handful of fresh chopped parsley and check the seasoning.
Step 4: Serve
Serve the ready lentil soup in a bowl and sprinkle some freshly chopped parsley on top.
