Like grilled calamari but never tried to cook it yourself? It’s SUPER easy!
So I was at the fish store the other day and came across some yummy looking calamari fresh from the Mediterranean. I decided I’d buy some and do a little experimenting. Now I love fried calamari, but we all know that stuff is deep fried and not a very healthy option. So it was my challenge to make a healthy dish with this tasty looking squid. I first decided on making a super easy (kinda cheating) aioli using mayonnaise instead of going through the slightly lengthy process of making it from scratch. Now usually I’d totally do this, but we had an amazing all natural mayonnaise that is just so good. Also it will save you a lot of time. So why not? Anyway the Aioli is to die for. It is just so good with seafood, and well probably anything that could use some dipping sauce.

For the grilled calamari:

- 3 tsp sweet paprika powder
- 1 heaped tbsp parsley, chopped

- 1.3 tbsp lemon juice
- Cleaned squid (200 – 250 g), sliced into 1.5 cm (~1/2 inch) rings or strips
- Lemon
Instructions for grilled calamari
Step 1: Prepare the calamari.
I think that grilling the calamari is the best way to cook it, but you will still get very good results using a griddle or frying pan and it saves time. If you are cooking in a pan, or griddle cut the calamari into 1.5 cm (~1/2 inch) rings or strips. If you are cooking on the grill, cut the body in half, making 2 large pieces and then gently score the flesh using a butter knife (you do not need to apply much pressure here and make sure you do not cut through). The large pieces will ensure it does not fall through the grill. You can cook the tentacles as well.
Step 2: Marinate
Mix together all the ingredients for the calamari and toss around to coat. Let it sit while you prepare the aioli.
Step 3: Make the aioli
Mix together all the ingredients for the aioli in a bowl and season with salt to your liking.
Step 4: Cook the calamari
In a hot pan, griddle or grill (high heat), cook the calamari for 2-3 minutes per side or about 6 minutes tossing around in the pan. Season with salt at the end as seafood can be naturally salty depending on how it has been cleaned and stored.
Step 5: Serve the calamari
To serve, squeeze on some lemon juice and enjoy with a green salad and the aioli – perfection!
