Healthy desert chia seeds pudding strawberries

Quicker and easier to make than most desserts, this uncooked, vegan, vegetarian super food dessert is a treat like nothing else. When I offer this to my friends, they usually say something like, “what in the world is that?”. But that pessimism is quickly forgotten once they give this lovely dessert a try.

When you mix chia seeds with a liquid, it turns gelatinous. This gel forming property of chia seeds is due to the high amount of soluble fiber in them and exactly what we are taking advantage of to make this pudding-like dessert.

Did you know that chia seeds come from a plant in the mint family native to South America and were an important part of the Aztec and Mayan diet? They are a good source of calcium, protein, fiber and omega 3. In fact chia seeds can contain up to 18% omega 3 fatty acids by weight. Since we all need more omega 3, in a predominantly omega 6 rich diet chia seeds are a great addition to your diet. What’s better than a healthy dessert?

Ingredients for vanilla coconut chia seed pudding with strawberries

  • 2 tbsp chia seeds
  • 1/2 cup coconut milk
  • Vanilla, you can use 1 tsp vanilla sugar, 1/8 tsp vanilla extract or 1/4 vanilla pod
  • 1 tbsp honey (can substitute with maple sirup or palm sugar/nectar)
  • A small pinch of salt
  • 4 strawberries, roughly chopped

Instructions for chia seed pudding

Step 1: prepare the chia seed pudding

In a cup mix the coconut milk, vanilla, honey, chia seeds and salt. Make sure the vanilla and salt is dissolved and the seeds are not clumped together. Put in a fridge for 30 min.
Note: if your coconut milk is separated and some of it is solid, you can worm it up in a water bath.
After 30 min, mix up the chia seeds with a fork to ensure it all turns into a uniform pudding. Put back in the fridge for at least another hour. It will keep for a few days so you can make the pudding the day before and assemble it before serving.

Step 2: Put together the dessert

Add half the chopped up strawberries to the bottom of a wine glass or a mason jar or any other nice presentable glass to serve the dessert in. Pour or spoon over the chia seed pudding and top with the remaining chopped strawberries. Ta da!
